As for raid itself, you'll probably want at least one extra drive and to RAID 5 it. As much as RAID 5 is slower on writing stuff, you'll notice two things:
1) It's the fastest of them all for reading (IME).
2) If one of the drives dies, you simply swap in your spare and give it a couple of hours to rebuild your data.
