Can you do that with the Z Y & X on the bottom of the Gmax screen?

Yep, you should be able to. Otherwise you can eyeball it. I do that a lot with models that aren't symmetrical.

In md3view, when I open the model, the textures are on it. But, when I import the skin, it says it can't find the textures. And they are 512X512, and jpg's

FYI, this is what a model .skin should look like:

Remove the spaces and the quotes. Also change the extensions to TGA. It won't look for a targa file, don't worry.

That worked. Now, how do you make the textures two sided? It doesn't look very good like this:http://i93.photobucket.com/albums/l4...handleprob.jpg You can see through the front of the handle to the back of the handle.
