Convert skins? What exactly do you mean? As in, to use a skin or model other than kyle to play in a single player game? That can be kinda complicated if you don't know what you are doing.
First, I would recommend not replacing any of the existing files for the characters in the game. Most people will tell you just to throw all the stuff for the character you want to play into kyle's folder, but that won't work. Here is a way you can select the character to play as in single player without "perminantly" altering your files.
First, we will set up a mod folder. Go into your computer and find the folder you installed JK2 into. Go into the "GameData" folder. In this folder you will see the "base" folder. That's when you know you are in the right place. In the "GameData" folder, create a new folder, and name it whatever you want your mod to be... for instance "SP_Boba_Fett". In your Mod folder, create a folder called "models"... in "models" create a folder called "players"... and in "players" create a folder called "kyle". There are to be NO SPACES in any of these folder names. In the "kyle" folder, you will want to place the model file (model.glm), the skin file (model_default), all the texture files, the animsounds file, or any other file that came as part of the model/skin part of the character.
so you now have JK2--> GameData--> "Your_Mod_folder"--> models--> players--> kyle--> and all the files
Now, you will need to zip the models folder and all its contents into a .pk3 zip file. WinZip is free and does this nicely. It is important to name the .pk3 file anything alphabetically after the word "assets" because the game will read the assets .pk3 files first, and anything that it reads after will override what the game found in there. If you name your .pk3 file "abba" for instance, it will read that first, and then overwrite it with the original data in the "assets" files.
Ok, so hopefully now you have a mod folder with a zipped .Pk3 file that has the model you want to play as in single player. All you need to do now is load up JK2, and go into the Options menu, and then go into the Mods menu. If everything worked out ok, there should an option in the list with the name of the folder you placed in the "GameData" directory. Select the name, and JK2 will restart with the new information. Start a brand new single player game. The model you wanted should be there.

Yeah... there are TONS of things I don't know how to do. Weighting a model's mesh to a system of bones and tags is the first thing on my agenda to learn. I actually "stumbled" onto the above method while trying to figure out how to replace some of the things in the game, without making those changes permenant. For instance, to make all the weapons in the game godlike, but be able to go back to the original settings any time I wanted. Using the above method, you can create mods for a bunch of characters, and load up any one you want to play the game as, or you can make a hyper-bryar pistol that fires even faster (and more accurately) than the blaster rifle, and only play with that sometimes.

You don't really have to use it as a mod. Just a .pk3 file, When you're tired of it just remove the file.
But you should NEVER replace the exsisting files.

that's true, you CAN just add the pk3 file, but creating the mod let's you make the choice in-game, instead of having to add or remove files whenever you want to change something.

Hmmmm, I've used the mod thing to replace models for the NPCs, switching them around a bit. I've used it to do tests on certain files when I've needed it. Adding stuff to the NPC and weapons files... silly stuff like that. Oh, testing out things with the surface files of models is a big one. That is going to help out with my Rebel Pilot model, because it will allow the model to have several faces, so you can have several different pilots with just one model.
