There are much bigger and noticeable, and therefore worth adding, differences between Panzer III (or any other tanks with several variants in FH) variants than between most different fighter variants.
Besides, as Mp5-Killa said, the non essential vehicles like the WV beetle that you seem to consider a second class addition compared to a slightly different BF109, actually make FH even more realistic (and cool of course) than if it just had every single model of a couple of vehicles.
I prefer anytime to have the devs surprising us with more vehicles like the WV or the Traktor than with a new model of the Tiger that's just different from the old one in a couple of details.

It's like saying a 1967 Chevy Chevelle is the same as a 1968 Chevelle. They just look totally different! The Gustavs certainly outperform the Emils in the case of the 109 and look VERY different.

And yes I have modeled a 109G6 with the early cockpit and a 109G6 A/S with the later cockpit and better engine. The model can be easily made into the later Gustavs and Kurfürst variants since there isn't THAT big of a difference in looks between the Gs and K. Also, altering my G model into an F wouldn't be too hard.
