From far out in space, the outer hull of the Death Star looks smooth, but it's not. The whole thing is covered with shield, turbolaser and control towers. it's an example of how distance blurs detail.

The same reason the moon doesn't look lumpy from here down on the Earth, it is very far away. The farther away you are from something the less detail the eye is able to perceive.

its the entire deathstar, but the deathstar is so big it appears round, just like our moon looks round but its actually all craters and deeep craters

really, never expected that, because when we see sometimes a star destroyer very close to the DS, it still looks flat. I was thinking damn are they always above/below (the pools) if they take that shot/angle.

Well even a simple star destroyer has trenches.
Thus trench follow flying isa common skill among republic pilots.

I've got to question why they even have trenches in the first place. Do they serve some sort of purpose?

The trenches aboard a Star Destroyer provided a physically shielded place for turbolasers, tractorbeam emitters, missle tubes, and docking bays.
