The Galor ships are too fast, they run circles around me hitting me with every torpedo they fire. They destroy the station and kill Picard and me. How can I defeat them? I can't even hit them.
Here is what the walkthrough says:
Soon, though, the Cardassians begin firing on Biranu Station. Destroy two
Cardassian ships and the other two will warp away. Captain Draxon says he's
going to chase them and asks you to join, and Kiska tells you the Cardassians
warped to Biranu 1. Go ahead, follow them. Though it's not essential.
-After a few minutes, two more Cardassian Galors will approach Biranu Station.
If you stayed behind, you're already there, but if you followed the Klingons to
Biranu 1, Warp back to Biranu 2 immediately!
It's only on Captain difficulty. Between cheap ships and an annoying first officer, I'm not having as much fun as I thought.
Well I used cheats to beat this mission, It was BS anyway. I don't plan on using cheats anymore, just wanted to advance the story-line. Just got the Sovereign and wow It's great. Way better for combat. :P

You gotta be kidding me! This is one of the easiest missions in the game. I haven't played the campaign for few years now, but let's see if I still remember that mission.
Klingons fight Cardassians and you are forced to just sit and watch until Cardassians start shooting at the station.
Felix: Third Cardassian looks like he's manuevaring for the fireing pass on the station, Sir.
Saffi: Report, Lieutenant.
Felix: I could be wrong... no, there! One of the Galors has fired on the station.
Miguel: Attacking a defensless station... Some challenge for a warrior race.
Kiska: What did you expect? They're Cardassians. It's what they live for.
Saffi: Belay that talk, Ensign. At least until later.
Kiska: Sir, we are receiving an emergency transmission from the station. On screen.
Picard: The station Commander is dead and I'm assuming command here. We have been severely damaged. You must protect this station.
At this point, I went to Red Alert, targeted third Galor and went straight for him. I grabbed him with a Tractor Beam when he turned his dorsal (upper) shield toward me and fired Phasers and Torpedos at his Shield Generator to disable it. I gave Fore Attack order to Felix to maintain constant Tractor lock. That way Galor couldn't manuevar and thus couldn't fire at me, so he was easy to destroy. Forth Galor was fireing at me all the time, but he didn't even scratch the paint from my hull because I had full shields when I joined the battle. I took him out the same way I took out third Galor. Other two Galors then warped away to Biranu 1, as you already know. I followed them and managed to destroy them both (with the help from the Klingons) using the same method before I was recalled back to Biranu 2, so I went there ahead of time. I managed to intercept those extra 2 Galors and destroyed one before he could take a shot at the station. Klingons pretty much took care of the other one.
Note that I played the game on First Officer difficulty level and I probably forgot some details. I see you edited your post while I was working on mine. I never used cheats in this game and was able to finish it anyway, so it is possible after all.
1. How do you avoid torpedoes? they always hit me, I try to evade using speed changes but no matter what they hit me. Sometimes an enemy ship will hit me with like 4 in a row and then I blow up. I try to move the strongest part of my ship toward the incoming torpedoes, but It doesn't always work.
2. I usually use full phasers to weaken shields, when I use low It seems to hardly do anything at all. Basically If I don't hit with my torpedoes then any ship can beat me. I change arcs, but sometimes I can't fire on them at all, due to them going in the few blind spots these ships have. The game recommends using low phaser fire to weaken subsystems, It does not seem to work for me. I try to hit them where they've lost shield strength but I can't maneuver to those spots often and I have to take all their shields down first.
I need help, I'm pissed off and having doubts in my skill as a gamer. I've been gaming since I was like 8 and I'm 24 now. I've mastered countless games and I want to master this one.
I always target manually and pilot on manual. My crew usually gets me killed instead of helping. I usually put all systems except sensors to 125, and drop sensors to 10 unless I'm fighting cloaking vessels. I use the tactical view(t) when I'm in combat at all times.
Your idea about using the tractor beam in combat is interesting, I will try that. I need more advice, please advise.

There isn't much left to advise. Like I said; grab them with the Tractor Beam when they turn their Dorsal shield toward you and don't let go. Just hold them immobile and fire your weapons at full strenght. If they turn their Ventral shield toward you, you can shoot their Warp Core instead of a Shield Generator. That way you can take them out even quicker.
Don't do all the work yourself. Let Felix manuevar the ship and fire the weapons. You just give him orders from the Tactics menu. That's how I always play and it works fine for me. I don't bother with evading Torpedos very much. Sometimes it's actually better to take a hit than to evade it. It all depends on the situation. I guess I developed certain feeling for it.
Hmm I'll give It a shot. Right now I'm on the mission where you do a simulation against the other federation ship. He beat me easily, I tried to self destruct cuz I was mad lol.
Tried it your way and still lost to the fed ship. Right after 2 klingon ships joined in and destroyed me within 3 seconds. I don't understand how or why. I'm considering quitting, and I just spent 60 bucks on this game. I just suck.
My phasers don't do enough damage and the tractor beam drains all my power.
I already punched my keyboard twice and slammed It once, about to knock my tower on the floor.

Aaaaah! So the old McCray is whooping your precious behind, eh? He's easy to beat. When you see he's about to fire Torpedos at you, quickly turn your strongest shield toward him (Forward, Dorsal or Ventral). I always shoot Impulse Engines on Akira class ships because they are easy to hit and by taking them out I'm taking away Akira class' greatest advantage - manuevarability. Fortunately, you can decline to fight Geronimo.
As for the Klingons; yes, they are a bit hard to defeat. Just let them destroy you and move on. It's a simulated battle anyway and you don't have to win in order to continue. Don't quit yet! Start the game from beginning at First Officer difficulty level if it's too hard for you now. And don't hesitate to ask me for any advice regarding any mission.
I was gonna post screenshots to show how badly I get owned. When I fight warbirds or galaxys in the sim I win easy. Any other vessel seems to out-run and out-gun me.

try this when the two galors warp away don't follow to biranu 1 stay put at the station and repair damage, while u wait for the 2nd wave, when they arrive follow Tricorder's posted suggestion.when the Rankuf returns the 1st wave will follow then the fun starts the klingons will help you kick their tails.
